This simple recipe is my version of a classic party favorite. Warm mini sliders are perfect for parties, game day or just any ordinary day. I usually like to make everything from scratch especially the chicken, however sometimes even the perfect food fanatic needs a break, and on those cheat days the magic happens. These mini sliders can be prepared ahead of time. Just bring the rolls to room temperature for about 20 minutes before baking.
4 cups shredded rotisserie chicken
15 mini sliders buns or dinner rolls
1 bottle BBQ sauce
2 Tbsp honey
12 oz Shredded Mexican style 4 cheese blend
12 oz shredded mozzarella cheese
4 Tbsp. butter room temperature
1/2 cup grated romano cheese
3 Tbsp. melted butter
Garlic salt and pepper to taste
Preheat oven to 350 degree F or 180 degrees C. Line a 9X13 baking dish with parchment paper.
Cut the sliders buns in half, spread a thin layer of butter on both sides (the butter works like a barrier so the buns don’t get soggy). Place bottom halves on the baking sheet.
In a bowl, mix the chicken with the bbq sauce and honey, season with garlic salt and pepper.
Layer the BBQ chicken on the bottom halves. Top with the mexican style cheese, then layer with mozzarella cheese. Place the top halves of buns on top.
Brush the top of the buns with melted butter then sprinkle with romano cheese.
Cover the baking sheet with foil and bake in the preheated oven for about 10 minutes. Remove the foil and finish cook for another 10 minutes or until the cheese is melted.
